Sandwich Companies Recall Premade Chicken Salad Sandwiches After Supplier of Cooked Chicken Finds Listeria Issue
A number of companies that make and markets sandwiches are recalling their chicken salad sandwiches due to a Listeria contaminated ingredient. Northern Tier Bakery of Saint Paul Park, Minnesota, Mrs. Stranttons's, E.A. Sween, Coborn's, Inc , Lipari Foods, and Grand Strand Sandwich are voluntarily recalling chicken salad sandwiches after the cooked chicken supplier, Tip Top Poultry, Inc., a Rockmart, GA, establishment, informed these companies of potential contamination with Listeria monocytogenes.

Listeria Outbreak Linked to Deli-Sliced Meats and Cheeses
CDC is investigating a Listeria outbreak linked to deli meat and cheese that has 8 cases with one death in 4 different states - MI, PA, NJ, and NY. Listeria specimens from ill people were collected from November 13, 2016 to March 4, 2019.
One would expect that Listeria coming in on deli meat or cheese can be spread through the slicer. Slicer, if not regularly cleaned, can allow build up on the slicer and slicer blade, and then transfer that to other products. Heat generated by the slicer, and the fact that the slicer sitting at room temperature, can allow for growth of the organism over the day.

NC Establishment Recalls Ham Product after Linked to Listeria Outbreak, One Death
Johnston County Hams, a Smithfield, N.C. establishment, is recalling approximately 89,096 pounds of ready-to-eat ham products that may be adulterated with Listeria monocytogenes, The recall was initiated after "FSIS was notified that a person ill with listeriosis reported consuming a ham product produced at Johnston County Hams. Working in conjunction with the Centers for Disease Control and Prevention and state public health and agriculture partners, FSIS determined that there is a link between the Listeria monocytogenes illnesses and ham products produced at Johnston County Hams. The epidemiologic investigation identified a total of four listeriosis confirmed illnesses, including one death, between July 8, 2017 and August 11, 2018. FSIS collected two deli ham product samples from the Johnston County Hams, Inc. facility in 2016 and in early 2018. Whole genome sequencing results showed that Listeria monocytogenes identified in deli ham both years was closely related genetically to Listeria monocytogenes from ill people."

Frozen RTE Meatballs Recalled Due to Listeria Concerns
Rich Products Corporation, a Vineland, N.J. establishment, is recalling approximately 3,420 pounds of RTE beef meatball products produced on Dec 17, 2017 due to the potential for Listeria contamination. "The problem was discovered on Jan. 24, 2018 when FSIS received notification from the firm that they shipped adulterated product into commerce."
A concern for FSIS is that because this is a frozen product, people may have put into freezers and not check to see if this is the recalled lot. Another concern may be that if this one lot is positive for Listeria, what about other other production lots.
While it is not indicated how the company determined the product had a Listeria contamination issue, it is important to note that the product was produced over a month prior to issuing the recall. So either internal testing was delayed or a customer company did the testing. If the former, then one would expect a test-and-hold procedure for the frozen product.
The risk - although this product will likely be heated before being served, as a fully cooked product, the heating instructions will be for heat and serve rather than fully cooking the product. The heat-and-serve heating conditions may not be sufficient to eliminate the organisms present.

CA Establishment Ships Product Sampled by USDA, and Recalls After Positive Listeria Test
A Hayward, Calif. establishment specializing in Indian foods, is recalling approximately 264 pounds of cooked chicken tikka masala products that may be adulterated with Listeria monocytogenes According to the recall notice, the problem was discovered on Nov. 13, 2017 when the UDSA district office received notification that the firm shipped product that USDA had earlier sampled (Nov 7) and confirmed to be positive with Listeria monocytogenes (Nov 13).
In this case, the company should have held product that was sampled by USDA until the results came back.

Recall of Burrito Products After a Sample Tests Positive for Listeria
A Denver, Colo. establishment, is recalling approximately 28,064 pounds of pork and chicken burritos and wrap products that may be adulterated with Listeria monocytogenes. The company notified FSIS on Oct. 30, 2017 that one of its products, Burrito Carnitas Caliente, had tested positive for L. monocytogenes during the firm’s product testing. After a review of the ingredients used in the Burrito Carnitas Caliente, the company determined that four additional products may be affected.

WA Establishment Recalls Cooked Meat Products Due to Process Deviation with Potential for Staph Toxin
A WA establishment is recalling sausage and other cooked meat products due to "a possible processing deviation that may have led to staphylococcal enterotoxin contamination." "The problem was discovered on Sept. 14, 2017, by FSIS Inspection Program Personnel (IPP) when they observed a possible processing deviation while reviewing records." If one would guess, during the smoking cooking process, product remained in the temperature danger zone for an extended period, probably before reaching lethality. If Staphylococcus aureus was present at this time, there would be the potential for growth and toxin formation. Further heating would not remove the toxin.

Black Forest Ham Recalled for Not Declaring Malted Barley on Label
A Maryland Company is recalling close to 120,000 lbs of RTE Black Forest Ham because the product label did not have an ingredient - Malted Barley. The recall came after a complaint was made.
The recall notice states that the absence of malted barley as an undeclared allergen. And while barley is allergenic, it is not included within FALCPA. It does contain gluten however.

Cooked Meat Recall Expanded for OK Firm Due to Additional Complaint of Undercooked Meat
An OK company drastically expanded it Nov. 26, 2016 recall for potentially undercooked ready-to-eat chicken from ~20,000 lbs to ~2,000,000 lbs. The recall now includes about 3 months of production (original was 2 day lots) and covers a wider variety of product. The expanded recall comes because of an additional complaint of raw product on November 28th.
No illnesses have been reported.

Three Recalls of Cooked Meat Products After Customers Complained of Undercooked Appearance
In the past few weeks, there have been three recalls of cooked meat products after customers/consumers complained that the product appeared to be undercooked. The recalls were for firms located in OK, GA, and MO. It is interesting in that these companies must have not been able to demonstrate that the suspect products had been properly cooked, and thus, they felt the need to do a recall.
Of course if the meat had not been fully cooked, there is the potential for pathogens such as Salmonella.
