Ruiz Food Products Inc., a Florence, S.C. establishment, is recalling approximately 55,013 pounds of frozen, not ready-to-eat (NRTE) breakfast burrito products containing eggs, sausage, and cheese that may be contaminated with extraneous materials, specifically pieces of plastic. The problem was discovered when the firm notified FSIS of three consumer complaints involving pieces of white, semi-rigid plastic found in the product. There have been no confirmed reports of injuries due to consumption of these products.

RTE Sausage and Sliced Pepperoni Recalled Due to Listeria Positive Sample
Ezzo Sausage Company, a Columbus, Ohio establishment, is recalling approximately 25,115 pounds of sausage products that may be adulterated with Listeria monocytogenes. The ready-to-eat sausage products were produced on Oct. 29, 2019, Oct. 30, 2019 and Nov. 5, 2019 and include sausage and sliced pepperoni items, most for use in pizza type applications. The problem was discovered when the firm notified FSIS of a positive sample result for Listeria monocytogenes.

Canadian Establishment Recalls RTE Meat Products Shipped to US after Positive Salmonella Tests
A Canadian establishment, is recalling approximately 1,076 pounds of ready-to-eat salami and speck products that may be adulterated with Salmonella These items were produced in Canada and were shipped to distribution centers in California, Illinois, Michigan, New Jersey and New York. The problem was discovered when an FSIS sample of the ready-to-eat salami product was confirmed positive for Salmonella. There have been no confirmed reports of adverse reactions due to consumption of these products.

WA Establishment Recalls Cooked Meat Products Due to Process Deviation with Potential for Staph Toxin
A WA establishment is recalling sausage and other cooked meat products due to "a possible processing deviation that may have led to staphylococcal enterotoxin contamination." "The problem was discovered on Sept. 14, 2017, by FSIS Inspection Program Personnel (IPP) when they observed a possible processing deviation while reviewing records." If one would guess, during the smoking cooking process, product remained in the temperature danger zone for an extended period, probably before reaching lethality. If Staphylococcus aureus was present at this time, there would be the potential for growth and toxin formation. Further heating would not remove the toxin.

Florida Company Recalls Sausage Product Due to Potential for Foreign Material
A Florida company is recalling close to 140,000 lbs of smoked meat and poultry sausage products due to the potential for foreign material contamination. This represents a month or so of production. From the report, "The problem was discovered when a metal magnet was found in the beef trim source product of the processed sausage products."

Cooked Chicken Sausage Product Recalled Because of Plastic Pieces
A Massachusetts company is recalled cooked chicken sausage due to the potential to have small plastic pieces. The recall was done after two consumer complaints were received about small pieces of plastic.
Product was sold at Trader Joe's.
Surprisingly, this was labeled a Class 2 recall (This is a health hazard situation where there is a remote probability of adverse health consequences from the use of the product), versus a Class 3(This is a situation where the use of the product will not cause adverse health consequences). Complaints of injury may be the reason, although not stated in the USDA release. Perhaps this explains the reason for the necessity of a recall on such a few complaints.

Sausage Product Recalled Due to Temperature Abused Rice Ingredient
A Texas company is recalling a Boudin, a sausage product made with cooked rice, after USDA found that the company did not properly handle the cooked rice from a temperature control standpoint.
Boudin is a Cajun type product that is a mixture of cooked rice, pork, and seasonings. It may contain onions and green peppers. The mixture is ground and stuffed into a sausage casing.
One of the primary risks associated with temperature abused rice is Bacillus cereus. B. cereus can cause illness when people ingest B. cereus cells (diarrheal syndrome) or by the toxin it produces (emetic syndrome). In this particular case, the concern would be the emetic syndrome. With this, the spore-forming organism is not destroyed when the rice is cooked, and then grows in the temperature-abused cooked rice. As it grows to high numbers, it produces the toxin. When the toxin containing food is eaten, it results in severe vomiting. This toxin is heat stable..
