On Passing Gas

"A person produces about 30 to 91 cubic inches (500 to 1,500 milliliters) of flatus every day regardless of their diet, and over 99% of those gases are odorless".    But what happens when we hold that gas in?  What causes some gas to be really smelly?  Two articles posted on Live Science address these important questions.

First, when hold gas in, it will eventually come back out.  "The external anal sphincter is the only part of the digestive process we have conscious control over. So, if we decide the time is not right to pass gas, we constrict the sphincter and the fart is trapped. Without a backdoor to escape from, the gases recede back into the colon.  But primarily, the body is trying to push gas out. So farts that are ignored during the day are mostly released during bathroom breaks or as the body relaxes in sleep at night."

What causes that anally-expelled gas to smell?  There are many variables that affect this including that person's intestinal microbiota.  One major culprit is "Sulfur-rich foods include legumes (such as lentils, beans and peas) and brassicas (such as broccoli and cabbage). These fibrous veggies also contain insoluble carbs that bacteria in the colon may convert into stinky gas."

FDA Issues Warning Letter to Missouri Sprout Producer

FDA issued a Warning Letter to St. Louis Calco, a sprout operation located in Fenton, MO.
The company was cited for:
  1. Did not establish and implement a written environmental monitoring plan that is designed to identify Listeria species or Listeria monocytogenes (L. monocytogenes).
  2. Did not establish and implement a written sampling plan to test spent sprout irrigation water (SSIW) or in-process sprouts for pathogens
  3. Did not clean and sanitize food contact surfaces you use to grow, harvest, pack, or hold sprouts before contact with sprouts or seeds or beans used to grow sprouts
Issues included:
  • The sprouts pool was observed with buildup of residue on the walls, bottom of pool and drain covers.
  • The belts of the sprouts pool had pieces of sprouts still present on the belts.
  • The wall around the sprouts collection table at the end of the sprouts pool had apparent mold growth where sprouts are in contact with the wall.
  • The mung bean sprout’s growing bins and soybean sprout’s growing buckets were observed to have buildup of brown residues when being actively used for growing your sprouts.
  • The metal on the outside of your growing bins and wall holding pins were observed to have buildup of brown residues. This metal was observed to be in direct contact with growing mung bean sprouts.

FDA Issues Warning Letter to Company Failing to Properly Acidify Tea Beverage

FDA issued a Warning Letter to Brewing Market Coffee, an acidified manufacturing facility located in  Boulder, Colorado.  The company failed to file a process for Black Tea Chai and employees were not properly trained.  Along with this, they failed to properly monitor pH.
The company "failed to exercise sufficient control, including frequent testing, and recording of results, so that finished equilibrium pH values for acidified foods are not higher than 4.6, as required by 21 CFR 114.80(a)(2). Specifically, the pH buffers used to calibrate your pH meter are maintained at ambient room temperature. On December 15, 2023, you tested the final pH of your Black Tea Chai drink, Lot (b)(4), immediately after heating the drink. The temperature of the drink at the time of the pH measurement was observed to be (b)(4)oF. You did not allow the Black Tea Chai drink to reach ambient room temperature before taking your final pH reading. Additionally, you did not allow the Black Tea Chai drink to reach equilibrium before taking the final pH measurement. You are not measuring the pH of your chai drinks, which are shelf-stable, after they have reached equilibrium."
This is interesting in that there are no low acid particulates to classify this as an acidified food where the equilibrium pH would be a concern.  Yes, achieving the proper pH is need, and if they were not doing that it is an issue, however, this would not have been classified as a what we normally view as an  acidified food.

Surveys Show People Stressed About the Safety of Food

An article posted elsewhere discussed two recent surveys on people's concern with the food supply.  One is a Gallup poll stating that "Americans’ confidence in the federal government’s ability to ensure the safety of the U.S. food supply has reached a record low".  The other from the International Food Information Council (IFIC) stated "Confidence in the safety of the food supply is down from last year
(62%, down from 70% in 2022). This confidence dropped most among Millennials and Hispanic  consumers.  Among multiple food safety issues, consumers are most concerned  about carcinogens in food, foodborne illness from bacteria, and  pesticides. Of those concerned with foodborne illness, nearly all are  familiar with “best by” dates, but only 2 in 3 (67%) are familiar with  what to do when their food has been recalled and far fewer (39%)  are familiar with the USDA’s Meat and Poultry Hotline."

As pointed out in an earlier post, there are no indications that the food supply is less safe, in fact, probably more safe than it had been.  This is not to say we are void of issues.  There are food related outbreaks.  There are also some unknowns regarding micro-levels of chemicals in food where more research is needed.  However, is this something that should be causing us stress? Hopefully not.

If you are concerned about something, avoid it.  Take heart that over 300 million people in the US eat food everyday (hopefully) and the number of issues is very small.  And the issues are normally recalls, not outbreaks.   Our biggest issues are related to the fact we need to balance what we eat, control how much we eat, and follow proper food handling and preparation procedures.

So to what degree does the onslaught of information fed to us each day via social and mainstream media impact this stress.  Certainly in an election year, we are inundated with information, some of it exaggerated or over emphasized perhaps.  And now that one of the parties has grabbed the food safety mantra, can we expect to see even more of this type of information?

Deli Meat Plant Responsible for Listeria Outbreak to Close, FSIS Notice of Suspension

Boar's Head Provisions has decided to shut down their Jarrett, VA facility in light of the Listeria outbreak that was linked to product produced at that facility.  There have been at least 57 cases with 9 deaths.

The closure affects 500 union workers as well as management.

The FSIS USDA Notice of Suspension is posted below.  It is interesting that the FSIS intensive sampling only found one positive in the environment...and that was on a pallet jack.  It is important to point out that this intensive sampling occurred as the company found out that product was involved in an outbreak, so did the plant get an opportunity to do a more intensive cleaning, was the plant operational at the time of sampling, was sampling done during operations and with that, was it done after production was going for 2 to 4 hours?  What did the company's internal sampling regiment results indicate, and how intensive of a program was it?

Michigan Establishment Issues Recall after Swapping Labels on Both Pork and Beef Sausage

Dearborn Sausage Company, Inc., a Dearborn, Mich. establishment, is recalling approximately 1,944 pounds of ready-to-eat (RTE) wiener products due to misbranding and undeclared allergens - the labels of the two products implicated in the recall were inadvertently swapped resulting in soy, a known allergen, and pork not being declared on the product labels.

The problem was discovered when the establishment received a complaint from a retailer that the products they received may have been incorrectly labeled. The establishment determined that they inadvertently mislabeled beef wiener products as beef and pork wiener products and vice versa. The products labeled as beef and pork wiener products actually contain beef wiener products that contain soy; therefore, soy is not declared on the finished product label. Additionally, the product labeled as beef wiener products actually contain beef and pork wiener products, therefore, pork is not declared on the finished product label.

France - Five People Treated for Botulism After Eating Pesto Sauce

In France, 5 people are receiving medical treatment after eating pesto contaminated with botulinum toxin.  "According to authorities in the Indre-et-Loire department in west-central France, a locally made brand of wild garlic pesto sauce may have been contaminated with a dangerous toxin that can attack the nerves."  "Authorities were trying to locate some 600 containers with the same "O P'tits Oignons" sauce before they are eaten, say officials."

The five people are currently on respirators - the toxin impairs nerve signals to the lungs.

Pesto is an oil based mixture of basil, garlic, parmesan cheese, pine nuts and olive oil.  It is generally prepared fresh and kept refrigerated.  The pH would tend towards neutral because there are no acidulants.  Oil mixtures provide an anaerobic environment.  So the combination of a more neutral pH and an low oxygen environment are conditions that allow C. botulinum to grow if the temperature is right and other organisms don't outcompete it.   So where one would have problems is when this is temperature abused.

In the US Food Code, oil-based mixtures such as garlic in oil are considered TCS foods (Temperature Control for Safety).  For operations wanting to sell such products, there would need to something called a secondary barrier to prevent growth.  The first barrier is refrigeration.  But as with this case, there needs to be something there to prevent growth if the product is temperature abused.  This could be an antimicrobial compound or an acidulent to lower the pH.

How Much Cheese Does the Average American Eat Annually?

The average American eats 42 pounds of cheese per year. Initially that seems like a lot, but when you add it all together....pizza...cheese snacks...sliced cheese on every type of sandwich and burger, and grated Parmigiano-Reggiano piled on everything...it makes sense.  And of course, there is the cheese tax.

The dairy industry is looking to increase capacity, so we need to continue to do our part.

The Average American Eats 42 Pounds of Cheese a Year, and That Number Could Go Up
Dairy processors are planning facilities across the US to meet surging demand.

Is there such a thing as too much cheese? Producers across the US are betting billions of dollars that the answer is no. America’s per capita cheese consumption has more than doubled since the government began keeping track in 1975, to about 42 pounds a year—more than all the butter, ice cream and yogurt combined. Facilities for making cheese account for more than half of the $8 billion in US dairy-product projects slated to come online from 2023 to 2026, according to the International Dairy Foods Association.

FDA Issues Warning Letter to Small Sprout Operation

FDA issued a Warning Letter to a small sprout farm operation located in Pennsylvania.  The facility operates as a qualified facility under modified requirements.  However, FDA does tell the facility that the application of modified requirements can be removed by the FDA is warranted, then it would be subject to all relevant requirements in the Produce Safety Rule

Issues noted in the Warning Letter:
  • FDA investigators observed gray sludge falling from the railing where the automatic sprinkler system is mounted and accumulating in sprouts growing below. The company told our investigator that this gray sludge was food-grade oil. However, the company was not able to provide FDA investigators the container or labeling of the apparent oil. Further, the substance appeared dirty.  Further, during the inspection closeout meeting, the company stated that the sprouts that may have become contaminated would be discarded, however, the company had introduced into commerce the sprouts observed on that date. In addition, the company did not address how to prevent the contamination of in-process sprouts in the future.
  • FDA observed apparent rodent excreta pellets underneath a table in the packaging room, where packaging material used for ready to eat (RTE) mung bean sprouts was being stored.  This finding demonstrates that rodents have access to food contact surfaces and may have directly or indirectly contaminated the sprouts with feces. The third-party pest control company documented rodent activity on November 28, 2023, December 26, 2023, and January 23, 2024, and recommended actions to prevent recurrence, however, the company did not implement any of these recommended actions.
  • Facility issues included a) The ceiling in the sprout processing area has peeling and chipped paint, and apparent cobwebs and insect frass directly above the open sprout harvesting machine. b) The floor directly under the sprout harvesting machine in the sprout processing area was wet, pitted, and cracked. This may cause the floor to be a harborage site for pathogens.
  • On January 31, 2024, and February 1, 2024, FDA investigators observed a pressurized hose used to rinse food contact surface equipment and in-process sprouts frayed and stored on the floor in the sprout production room. This may have resulted in the contamination of your sprouts with any substances, including any pathogens, from the floor.  Furthermore, the hose described above was used without being cleaned or sanitized. An employee with gloved hands touched the circuit breaker, cleaned a seed bed, handled the hose, and then returned to handling sprouts without either changing their gloves or removing the gloves and handling the sprouts with clean hands. This may have resulted in the gloves contaminating the sprouts with any substances contacting the gloves prior to hose handling.
  • During the inspection, we observed that an exit door is in poor repair and unable to fully close to exclude pests from entering the facility. Additionally, there were harborage conditions around the perimeter of the facility that potentially attract pests, including sprouts around the external cement block of the unplugged trash receptacle and empty plastic containers behind the building.

Canadian Firm Recalls Fudge Product After Packages Found to Have Mold Growth

Authentik Fudge of Sainte-Julie, Quebec, Canada, is recalling 840 units of Chocolate Fudge with Nuts branded MONTREAL FUDGE, due to potential mold growth contamination.  The company initiated this recall after a consumer complained about some mold pieces inside the purchased box and also found also some remaining unpacked sealed products at the manufactured place that had beginning signs of mold.

Fudge generally has a low water activity level.  If higher, than preservatives can be added.  So if a product does mold where it normally does not, then it may have been mis-formulated.  Another possibility is that the product could have been exposed to excessive moisture from the environment where that moisture condensed on the product surface.

FDA Issues Warning Letter to Ecuadorian Company That Produced Lead-contaminated Apple Sauce

FDA issued a Warning Letter to the company that was responsible for producing the cinnamon apple sauce that was contaminated with lead.  As you may remember, the cinnamon used had been contaminated with lead chromate in what FDA believed to be a case of economically-motivated intentional adulteration.  CDC reported over 300 cases of potential lead poisoning.

The Warning Letter states the obvious about shipping contaminated product to the US, and then provides suggestions on the company's corrective action.

FDA Warning Letter to NV Spice Company for Inadequate Supply Chain Preventive Controls

FDA issued a Warning Letter to High Quality Organics, a ready-to-eat (RTE) spice facility, located in Reno, NV.  The company processes and packages RTE organic herbs, spices, dried fruit and peels, and dried vegetables.  The main issue was the company relies on others to process products so that they are considered RTE, but does not manage this through the Supply Chain program.

The supply-chain program does not provide assurance that a hazard requiring a supply-chain-applied control has been significantly minimized or prevented, as required per 21 CFR 117.410(c).
  • The company receives untreated herbs, spices, dried fruits and peels, and dried vegetable products and then directs the untreated products to (b)(4) third-party providers that apply a lethality process.
  • The "preventive control measure is “Validated lethality ‘kill step’ with Treatment Certificate”, however, the company's supply chain program does not verify that the parameters selected and applied by 3rd party treatment providers are adequate to control the hazard of vegetative pathogens such as Salmonella.
  • There is no review of the process parameters identified in the treatment certificate from the (b)(4) providers, as identified as a preventive control measure required within Hazard Analysis, and you
  • Did not comprehensively evaluate whether the parameters are appropriate for all your products undergoing the treatment.
  • Did not maintain documentation that the untreated spices you purchase and send to the third-party (b)(4) providers are treated under a validated process that delivers an appropriate destruction of Salmonella.
The company did not conduct a reanalysis of your food safety plan when needed after Ground Organic Parsley, lot # 62868 and lot # 63196, tested positive for the pesticide Chlorpyrifos ((b)(4)).

Are Food Safety Issues Getting Worse? No, Not Really.

This week, I was asked by a reporter why food safety issues are getting worse...whether that be recalls or outbreaks.  The conversation was in light of the Boar's Head deli meat recall after being linked to a large Listeria outbreak.  Why this outbreak is awful, it is one of the first Listeria outbreaks that have been linked to meat products in the last two years.

A few things to consider when addressing this question.
  • After looking at food-related outbreaks posted on CDC and FDA's website, there is no real increase in the number when looking at cases for the past several years, but there does seem to be a higher percentage of outbreaks where the causative agent has been identified.  Our regulatory agencies are doing a admirable job in improving the determination of the source of outbreaks.  At the same time, I have seen companies doing a better job to be in compliance with the HACCP-based regulations or 3rd party audit standards..
  • Technology has improved identification and tracking of outbreaks.  Twenty years or more ago, many of these outbreaks would not have been identified as outbreaks.  CDC working with State partners utilize improved technology for identification of pathogens and communication to link related cases.
  • Most recalls are not linked to outbreaks, but that is not always clear when announcements get published in the news..  There are normally a number of recalls each week, but they are most often related to things such as undeclared allergens which are most often discovered in the supply chain through observation, and not injury.
  • Risk is not adequately addressed in news releases, and in many cases, overblown. For example,  many people will not be allergic to the undeclared allergen in a product, but one would not know that in the headline.  For example, Salad Recall Update as FDA Sets Highest Risk Level, ad the article states, "On August 7, the recall was classified by the FDA as Class I, which is the highest risk level.  These are issued when there is a "reasonable probability" that the use of, or exposure to, a product could "cause serious adverse health consequences or death.""  However, the issue is that the product contains undeclared almond and soy, certainly an issue for those who are allergic to these items, but not for others.
  • Headlines used by the news media, including social media, present these outbreaks and recalls with a certain shock value.  Take this headline for example  - "FDA reclassifies nut recall to highest risk warning after testing positive for listeria" (article below) that was published on August 13th.   The recall was posted on the FDA website on 7/22/24.  There were no illnesses, but it seems that FDA reclassified this to Class I, which it should have been to start.  In this case, the product was walnuts, not a product that will not support the growth of Listeria and so poses.
  • Recalls are often limited in scope in terms of distribution but receive national attention.  The walnut recall mentioned was limited to two states but receive national attention.
  • We see recalls are posted and then reposted for weeks.  Many times, it is an online news source that posts recalls weeks after the initial posting.  This can make it seem like it is a new recall.  Without investigation by the reader, one may assume it is a new recall.
  • The regulatory agencies will often provide updates to an outbreak listing additional cases or announcing that the outbreak is now over, and this information may get picked up as news providers and posted as if this is a new issue.
In general, we are bombarded with notices on food safety, and without careful investigation by the reader, one may think that food safety issues are out of control.

There are over 330 million people in the US, and if we consider that people are hopefully eating 2 to 3 meals each day, the reported number of cases of foodborne illness are pretty small.  This is not to say it is unimportant, because all food should be safe.  However, to worry that our food supply is not safe...well, there are many other, more things to worry more about.

More Cinnamon Powder Recalled After State Lab Testing Finds Lead

El Chilar HF, LLC on 03/06/2024 issued a recall of 2 lots of El Chilar “Cinnamon Ground” (1.25 oz bag), because it may contain traces of lead. Further investigation indicates that the issue could be caused by a potentially adulterated raw material from the supplier.  The Maryland Department of Health (MDH) collected samples in February 2024 from Lot: E-054, EX 0225 and D-181, EX 0624 El Chilar Ground Cinnamon, which tested high in lead. These additional lots of El Chilar Ground Cinnamon have been added to the original recall.

Update on Salmonella Outbreak Linked to Cucumbers

FDA provided an update on the Salmonella outbreak linked to cucumbers. To this point in time, there have been 449 reported cases with 125 hospitalized. The date of onset of the last illness was June 4, 2024.

CDC and FDA combined two outbreak investigations because of similarities, "including when and where illnesses occurred, the demographics of ill people, and the foods they reported eating before they became sick. Laboratory, epidemiological, and traceback data have determined that cucumbers from Bedner Growers, Inc., of Boynton Beach, Florida, and Thomas Produce Company, of Boca Raton, Florida, are likely sources of illnesses in this outbreak; however, these growers do not account for all the illnesses in this outbreak."

"Based on traceback information collected, Thomas Produce Company supplied cucumbers to multiple points of service where ill people reported eating cucumbers. As part of the investigation, FDA conducted an onsite inspection at Thomas Produce Company and collected samples. Salmonella Braenderup was detected in samples of canal water used by Thomas Produce Company. Whole Genome Sequencing analysis determined that the water used by Thomas Produce Company contained the Salmonella that is a match to a strain of Salmonella Braenderup that is causing some of the illnesses in this outbreak."

"Additional types of Salmonella were detected in both soil and water samples collected at both Bedner Growers, Inc. and Thomas Produce Company. Multiple other strains of Salmonella, unrelated to this outbreak investigation, found at Bedner Growers, Inc. matched clinical isolates from illnesses in the National Center for Biotechnology Information’s (NCBI) database that occurred in previous years."
