USDA Issues Alert on Mail Order Meal Kits That Have Been Linked to E. coli Outbreak

The U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) is issuing a public health alert due to concerns that ground beef products in HelloFresh meal kits may be associated with Escherichia coli (E. coli) O157:H7 illness. A recall was not requested because the products are no longer available for purchase.  (The meal kits containing ground beef for this public health alert were shipped to consumers from July 2-21, 2022).  

This comes as part of an investigation of an outbreak of E. coli O157:H7 and raw ground beef is the probable source of the reported illnesses. Traceback information identified that multiple case-patients received ground beef produced at establishment M46841 and distributed by HelloFresh in meal kits from July 2-21, 2022. Traceback of materials used to produce the ground beef is ongoing and FSIS continues to work with suppliers and public health partners on the investigation.

PA Dairy Recalls Cheeses After FDA Finds Listeria in Samples

Keswick Creamery of Newburg, Pa is recalling Calverley Cheese, Vulkwin’s Folly Cheese, Vermeer Cheese, Havarti Cheese, Wallaby Cheese, Cider Washed Tomme Cheese, Feta Cheese, Whole Milk Ricotta, Bovre Cheese (plain, oregano and garlic, herbes de provence, cranberry and honey) and Quark Cheese (plain, dill and onion), because it has the potential to be contaminated with Listeria monocytogenes.  Product was distributed to regional farmers' markets and farm store retail sites..

Salad Dressing Recalled for Allergens After Wrong Back Label Used

Van Law Food Products Inc. is recalling Whole Foods Market 365 Organic Creamy Caesar Dressing because it contains undeclared Soy and Wheat allergens.  The recall was initiated after it was discovered that the product was distributed in packaging that did not reveal the presence of Soy and Wheat allergen. Subsequent investigation indicates that the problem was caused when the back label from another product was mistakenly put on the product being recalled.

We have seen a good number of this type of labeling issue resulting in a recall.  While the front label has the product name in large letters, the back label with the nutritional and allergen informaiton has the name in smaller type, thus making it easy to mess up.  This labeling activity (matching the front and back label against product in the bottle) needs to be an Allergen Preventive Control.

CDC is investigating an outbreak of Shiga toxin-producing E. coli in four states, with 37 people infected and 10 hospitalized.  Wendy's restaurants have been associated with this outbreak and the company has taken actions to remove the romaine lettuce being used in sandwiches from restaurants in this region.  Cases include Ohio (19 cases), Michigan (15) Pennsylvania (2) and Indiana (1).

Epicurean Butter LLC of Thornton, CO, is recalling its 3.5-ounce tubs of " Wegmans Lemon Dill Finishing Butter" food due to a recall from our frozen dill supplier, SupHerb Farms, because it has the potential to be contaminated with Listeria monocytogenes.  Epicurean Butter LLC received notice from its herb supplier that certain lots of frozen dill could potentially be contaminated with listeria based upon a test from one of the supplier’s food manufacturing customers in Canada that used the ingredient in one of their finished products.

Here is another instance when a supplier's supplier has an issue that leads to a recall.  In evaluating a supplier's food safety program, it is important to assess how good their supplier control program is.  As part of Preventive Controls regulation, the supplier should have identifies hazards of incoming materials.  In this case, where a dill product is added to the butter as a post-process addition (in essence, a RTE ingredient), that dill supplier must have adequate controls in place.  The finishing butter processor establishing the verifications activities that they will perform to assure the safety of that dill.

Capri Sun Recalled After Complaints of Cleaning Solution Remaining in Processing System

Kraft Heinz is announcing a voluntary recall of approximately 5,760 cases of Capri Sun Wild Cherry Flavored Juice Drink Blend beverages.  The voluntary recall comes after diluted cleaning solution, which is used on food processing equipment, was inadvertently introduced into a production line at one of our factories.  The issue was discovered after we received several consumer complaints about the taste of the affected product. The Company is actively working with retail partners and distributors to remove potentially impacted product from circulation.

Residual sanitizer / cleaner is often a point of discussion when conducting the hazard analysis.  Here is an example of where it became an issue.

Virtual Audits - Understanding the Issue of Video Capture

 At the IAFP Annual Meeting this past week, an interesting session was held on remote or virtual audits.  While there is agreement that virtual audits are here to stay, at least for certain aspects of an audit, the presenters discussed the limitations of such an audit.  One of the most important was that an auditor will not have true view of the situation within a facility.  But for the company being audited, one important issue is video capture, or taking a video of an operation and sending it to the auditor.  This is what they term video capture.

The issue with video capture is that once it is sent out, the processor loses control of that video and that it can exist forever on someone else's file.   One downside of this is that the audit may never end.  That is, some can review a video again and again, studying it to a much higher degree than possible during an in-person audit.

Before a virtual audit, it is important to review best practice for audits. (Food Safety Magazine, May 21)  One of these is to insist on only using live video with no recording.  Along with this, all shared documents should state 'confidential commercial information'.

Milk in Dark Chocolate? CA Firm Recalls Dark Chocolate Truffles Due to Residual Milk Protein

That’s it Nutrition, LLC of Los Angeles, Calif., is issuing a voluntary recall of its 3.5, 5.0, 16.0 ounce and 12-count packages of Dark Chocolate Truffles because they may contain trace amounts of milk proteins.  The recall was initiated after it was discovered that the product contained trace amounts of milk proteins and was distributed in packaging that did not disclose the potential presence of milk. Subsequent investigation indicates the problem was caused by cross contamination on shared lines with milk chocolate by the chocolate supplier. All That’s it. Dark Chocolate Truffle product produced as of August 1, 2022 has been lab verified and validated by the manufacturer and an independent third-party as being free from all milk proteins.

This is evidently a big issue, dark chocolate product containing residual milk.  Some manufacturers declare milk as an allergen on their dark chocolate product to avoid this type of issue.

USDA Plans to Declare Salmonella an Adulterant in Breaded Stuffed Raw Chicken Products - Big Deal or Not a Big Deal

USDA released a statement that they will declare Salmonella an adulterant in breaded raw chicken products.  The reason is that these types of products have been involved in many Salmonella outbreaks where people tend to undercook them.  This occurs because they are partially cooked, or par-cooked, in order to set the breaded coating on the outside, and this leads consumers to think that they are fully cooked.  

From the USDA, "Since 1998, breaded and stuffed raw chicken products have been associated with up to 14 outbreaks and approximately 200 illnesses. Products in this category are found in the freezer section and include some chicken cordon bleu or chicken Kiev products. These products appear cooked, but they are heat-treated only to set the batter or breading and the product contains raw poultry. Continual efforts to improve the product labeling have not been effective at reducing consumer illnesses."

There has been a pushback against the declaration of Salmonella in raw poultry products.  Salmonella has been part of a chicken's natural microflora for a few hundred thousand years, so to completely eliminate Salmonella is not easy, certainly without changing a fresh chicken into some overly processed 'fresh-like' chicken.  But with breaded chicken products, they have already started the process of cooking, so going a bit further in terms of cooking to eliminate Salmonella may not be a big deal (although quality can be an issue in that the consumer will now recook a fully cooked item versus a partially cooked one potentially resulting in a drier, chewier product).  But the big deal is that once we start down this road, there will be a greater push to declare Salmonella an adulterant in all raw poultry products.

Product was recalled from what looks to be a 5 day production window.  Based on coding, 22200 would indicate product was produced on July 19, 2022 and has a sell by of 8/3/22..a 14 or 15 day shelf-life depending on how you count the days.

Recall of Chocolate Covered Blueberries After Customer Finds Chocolate Covered Almonds in Package

Wilbur’s of Maine Chocolate Confections of Freeport, Maine is recalling its 8 oz resealable package of milk chocolate covered blueberries because they may contain undeclared chocolate covered almonds. The recall was initiated after a customer discovered chocolate covered almonds in a package (of milk chocolate covered blueberries). The blueberry packaging does not reveal the presence of almonds. Subsequent investigation indicates that the problem was caused by a temporary breakdown in the company’s packaging process. The process has been corrected and the company has instituted additional safety checks and corrective actions.

Soup Base Recalled After Label Design Issue Results in Undeclared Allergens

Wismettac Asian Foods, Inc., Santa Fe Springs, CA is recalling 17.6 oz packages of Marutomo Dashi Soup Base because they may contain undeclared wheat and soy.  The recall was initiated after it was discovered that the product containing wheat and soybean was distributed in packaging that did not reveal the presence of wheat and soybean. Subsequent investigation indicates the problem was caused by a human error during product label checking process.
